What is the difference between Indian and Chinese Dehydrated Garlic?

Indian garlic is generally smaller in clove size but significantly stronger in pungency and aroma (higher Allicin content) compared to Chinese garlic, which is often milder. Indian garlic usually has a creamy-golden hue, while Chinese garlic is often whiter due to different processing/bleaching norms.

Why does Garlic Powder cake or clump easily?

Garlic powder is highly hygroscopic, meaning it absorbs moisture from the air very quickly. This causes clumping. To prevent this, it must be stored in strictly air-tight packaging below 65% humidity. Sometimes, silicon dioxide (anti-caking agent) is added at <2% upon customer request to maintain free flow.

Can you supply "Toasted" Garlic?

Yes. We offer Toasted Garlic Granules/Powder which undergoes a roasting process. This gives the product a darker (brownish) color and a nutty, savory flavor profile, ideal for bakery toppings and spice rubs where a "cooked garlic" taste is preferred over the raw pungent taste.

Do you provide samples and what export documentation is included?
